Biscuits

I used to read to my son a lot when he was little. One of the books we read together was, “The Magic Thief”. (The Magic Thief). At the end of the book there was a recipe for biscuits. My son loved the book and decided he would make these magical biscuits.  They were so soft and tender that we have made them ever since. I love to eat them warm from the oven with butter and jam. My husband likes to eat them with butter and bacon in the middle, and my son just likes to grab them right off the pan and eat them plain. How do you eat your biscuits? I’m sure a little honey would be good also.  These warm up well in the microwave if you are lucky enough to have leftovers. I hope your family enjoys them as much as we do.

Recipe:

  • 2 Cups All Purpose Flour
  • 1/2 teaspoon Salt
  • 4 teaspoons Baking Powder
  • 2 teaspoons Sugar
  • 1/2 Cup Softened Butter
  • 2/3 Cup Milk (I prefer whole milk if I have it.)
  1. Mix the dry ingredients together.
  2. Cut in the butter with a fork.
  3. Then add the milk and mix well until it forms a dough.IMG_3851
  4. Then place on a floured surface and knead in a little extra flour until you have a nice dough that does not stick to your fingers.  DO NOT overwork the dough. I have a pastry cloth and rolling pin cover that I like to use for this. (Regency Pastry Cloth and Rolling Pin Cover Set). I make these biscuits quite frequently, and they do not stick to the pastry cloth near as much as the counter top.  So you can add less flour and therefore have more tender biscuits.  Also the clean up is much easier, since the mess remains on the cloth.  Then just dust the extra flour into the garbage, place the cloth in a bag, and store in the freezer until the next time you want to make biscuits, a pie, or anything that needs rolled in flour. IMG_3852
  5. Then roll your dough out to the desired thickness (I usually do about 1/2 to 3/4 of an inch)
  6. Cut out your biscuits with a biscuit cutter, or use a drinking glass.IMG_3853
  7. Place the biscuits on your pan and bake at 400 degrees for about 9-10 minutes.
  8. Remove from the oven and brush the tops of your biscuits with butter.
