Me Oh My It’s a Blackberry Pie!

What is the best dessert ever? I suppose if we asked 50 people that, we would get 50 different answers. But no matter, because I’m sure I am correct when I say that Blackberry pie is the best dessert ever! Maybe I feel this way because it never gets old. I mean how many places can you go and order a blackberry pie? I can make a pie, but seem to have some crazy idea that pies can only be made for holidays and special occasions. Maybe that stems from pure laziness, or just knowing that I should not be left by myself with a blackberry pie and a fork. So here is my recipe for the best dessert ever! Me Oh My It’s a Blackberry Pie!

Ingredients

  • 2 Cups Flour
  • 1/2 teaspoon salt
  • 2/3 Cup Crisco
  • 1/3 Cup Very Cold Water
  • 1 1/2 teaspoon vinegar
  • 1 Deep Dish Pie Pan
    For the Filling
  • 3 One Pound Bags of Frozen Blackberries (You can use fresh berries but I would have eaten those up already)
  • 1 Cup of Sugar
  • 6 Tablespoons Flour
  • 2 Tablespoons Cornstarch

Instructions

  1. Mix the flour and salt together and then cut the crisco in with a fork or pastry cutter until you have a crumbly mixture.
  2. Add the water and vinegar trying not to over work the dough.
  3. Divide the dough into 2 portions, one for the crust and one for the lattice top. Roll one portion of the dough out to a nice thin circle. (I like to use a rolling cloth for this, so I can get a nice thin crust that does not stick to the counter top. My Mom likes to roll her crust between 2 large pieces of plastic wrap.
  4. Place your rolled out crust into the pie pan and brush the inside with a beaten egg. This will seal the crust so your filling does not leak out while baking.
  5. Then roll out the other portion of your dough. I have taken a picture of my lattice cutting tool here. Mine came from my kids old play dough kitchen set. Don't laugh, it works! Pretty sad when you steal your kids toy kitchen utensils.
  6. Now leave your crust alone for a minute and get a large pan to cook your berries in. Place all the berries in the pan and add your sugar. Also add your flour and corn starch and cook until the berries are no longer frozen and have cooked down a bit.
  7. Pour your filling into your prepared crust.
  8. Cut your lattice with your play dough tool, knife, pastry cutter, or whatever makes you happy.
  9. Then lay the strips criss cross on top of the pie.
  10. Trim some of the excess pie crust off the sides, leaving enough extra to roll to the inside to make a nice edge. I like to sprinkle a bit of sugar on the top of my pie for looks.
  11. Preheat your oven to 375 degrees. You might want to put an oven liner or some foil in the bottom of your oven. This pie loves to boil over and make a mess if you are not careful.
  12. Bake for about 45 minutes to 1 hour depending on your oven.
  13. Let it cool before you cut your pie or the filling will run all over the place. I know this from experience. It's hard to wait when your house smells like blackberry pie! I think this pie tastes even better the day after you make it. The sugar gets a chance to sweeten the berries up a little more if you let it set for a day. So this is a great make ahead dessert!
